PROBLEM: How to make consistent bread and roll products with less labor and increased efficiency.

Achieving product consistency from batch to batch, running at optimal throughput and finding equipment with the flexibility to meet the needs of multiple products are issues that concern bakers everywhere. Adamatic's VDR line can run 1 ¼-oz. to 19-oz. pieces at speeds up to 18,000 pieces per hour on a single line. Adamatic's NDR line can run 1-oz. to 10-oz. pieces at up to 30,000 pieces per hour. Bakers can choose the line that works best for the size of their production.

“The roll lines allow bakers to combine operations. Instead of purchasing a bread line and a roll line, the VDR or NDR give bakers the ability to produce everything on just one piece of equipment,” says Merle Cooper, Midwest sales manager, Adamatic.

Robert Gonnella, vice president, operations, Gonnella Bakery, Chicago, has used Adamatic lines for almost 20 years and agrees, “The Adamatic lines are a source of convenience. Adamatic is one of the only companies that offers a variance of scaling weights. The Adamatic roll lines we have go anywhere from 2 oz. to 10 oz.” Other companies, he says, don't offer that great a range. “I don't have enough room to fit two or three pieces of equipment. With Adamatic, I only need one machine.” In addition to being versatile, he says the machine also is well-built and reasonably priced.

Both the VDR and the NDR lines can accommodate round rolls, moulded rolls, hot dog and hamburger buns, large sub rolls and even small baguettes. Providing such a wide range of versatility on one machine saves bakers money otherwise spent on multiple pieces of equipment. The line's turret head roll stamper can stamp five types of rolls, including Kaiser, split, cross, cover and Portuguese leaf rolls.

In addition, the roll lines can be fully computerized to further ensure complete consistency of product. When an operator is ready to switch over to a different product, everything on the line changes automatically, reducing the amount of manual labor involved. BISSC approved, the line is easy to maintain and offers bakers increased sanitation. “The legs and covers are all stainless steel. From a sanitation standpoint, it's very easy to clean,” Cooper says.
