Touché Bakery’s

Nonni's, Chicago, introduced larger biscotti in an “operator friendly” 48-count case, available exclusively through foodservice distributors. The biscotti is 6 in. long, a full inch longer than Nonni's standard product. Flavors include Originali — a traditional light and crunchy almond biscotti, Cioccolati — an almond biscotti dipped in chocolate, and Triple Chocolate — a chocolate biscotti dipped and drizzled in bittersweet chocolate. Originali have a nine-month shelf life, while the chocolate coated varieties have a six-month shelf life.

Touché Bakery's Snowball Cookies, London, Ontario, are now available with new packaging. Similar to a traditional wedding cookie, Snowball cookies have a unique flavor and texture. The 8-oz. retail package is produced in a tree nut-free, peanut-free, sesame seed-free and kosher facility.

Natural Nectar, Cold Spring Harbor, N.Y., introduced its Patisseries du Monde-Pastries of the World collection of cookies and biscuits. Each cookie is made with all natural ingredients and 0 g trans fat in a style that reflects regional specialties of artisan bakers around the world. The collection includes Lady Fingers from France, and Pretzel Cookies and Cinnamon Sticks from Holland. Whole Grain Wafers are made with 9 g of whole grain per serving and layered with a creamy filling in chocolate, vanilla and strawberry flavors.

Bake'n Joy, North Andover, Mass., introduced a new and improved formula, flavor line up and pack size for its 1.6-oz. ButterRich proportioned cookie doughs. The ButterRich cookie line is made with butter and other premium ingredients and is trans fat-free. New flavors joining traditional flavors include butter pecan, Chocolate Chip'n Chunk, M&M's®, oatmeal raisin, peanut butter, triple chocolate and white-chocolate-cranberry-almond. The new pack size contains 135 dough pieces per case.
