Reduce staling in bakery foods
with California raisins. The ingredients contain high levels of
propionic acid, which acts as a natural preservative, the company
says. The ingredient also contains a naturally occurring organic
acid, called tartaric acid, which enhances the flavors in bakery
foods, the marketing board says.
