Founded in 1982 by the late Dr. William Knightly, Emulsion Technology Inc. continues to support the legacy of Dr. Knightly's work and emulsifier expertise. At present, there are two commercial products offered to the marketplace:

  • Encap®220P – This patented specialty co-processed system combines hydrophilic lecithin and distilled monoglycerides to offer bakers a high purity (IV<5, 72% alpha monoglycerides) effective delivery system for dispersible and functional monoglycerides. The self-hydrating beaded form of Encap®220P delivers excellent anti-staling properties along with improved dough conditioning. This product offers enhanced value where other standard monoglycerides, monohydrates or alpha gels are used.
  • Encap®850 – Using patent pending technology, this specialty spray-dried system combines several alpha-tending emulsifiers along with other functional ingredients to deliver superior batter aerating properties for all cake-type systems. Using a special process and formula, the high melting and lipophilic emulsifiers are stabilized in their highest functional form and delivered in a spray-dried format that allows for easy dispersibility. The resulting functionality includes excellent batter aeration, and improved structure and stability of the system. This improved functionality allows formulators to develop transfat free recipes by replacing partially hydrogenated fats and shortenings with a healthier liquid vegetable oil. This not only results in a cake with improved moistness and eating qualities, but it also offers improved efficiency in the plant and process because there is no need for plastic fats and a creaming step.
